Aged or Unaged: Does Your Spirit Need Time in a Barrel?

What does a barrel actually do to a spirit?

A barrel is not just a container — it's an active ingredient. As the spirit sits, three things happen. The wood gives up compounds that add color and flavor (vanillin, tannins, that toasted-oak character). The char inside the barrel filters out some of the harsher notes. And slow interaction with air rounds off the edges over time.
